Jo Pratt’s Poached Lemon and Tarragon Chicken with Broccolini, Chantenay Carrot and Asparagus Broth
- 4 chicken breasts (skinless)
- 1 small lemon (finely grated zest and juice)
- 4 springs of tarragon
- 1 garlic clove (crushed)
- 30.4 fl oz chicken stock
- 5 fl oz white wine ((optional — extra chicken stock can also be used))
- 2 tbsp tomato puree
- 7 oz broccolini
- 7 oz chantenay carrots (washed well and halved lengthways if they’re thick)
- 7 oz asparagus tips
