Cauliflower and Chicken Curry
- 6 chicken thighs (skinless and boneless, cut into bite sized chunks)
- 1 tbsp oil
- 1 onion (finely diced)
- 2 green chillies (finely diced)
- 2 cm ginger (finely grated)
- 3 garlic cloves (pureed)
- 1/2 tbsp chilli powder
- 1 tbsp turmeric
- 2 tbsp garam masala
- 1 tbsp soft brown sugar
- 1 cauliflower (broken into florets)
- 1 tin chopped tomatoes
- 1 can coconut milk
- 2 large handful spinach
