This healthy turkey burger recipe is crazy good. My mom requests them every time she comes to visit. They are juicy, flavorful, and pretty with little flecks of spinach. If the bits of green give your children pause, tell them it’s confetti and burgers will seem like a party! A very yummy party.
Turkey Burgers with Spinach
- 1 lb ground turkey
- 2 large eggs
- 1/4 – 1/3 cup breadcrumbs (cracker crumbs, matzoh meal, smooshed rice cakes are ok too)
- 1 cup spinach leaves (torn)
- 1/2 tsp salt (or to taste)
- 1/4 tsp pepper (or to taste)
- 1 tsp olive oil
- Place all the ingredients into a bowl
- Wet your hands first, and then use them to mix everything thoroughly together.
- Heat 1 tsp olive oil over medium heat. Form the patties to be about 1/2-3/4 inch thick (they will be very soft) and put them gently onto the hot oil.
- Cook until you lift the edge and the underside is brown, about 5 minutes, flip and then wait another 5 minutes.
- Test by giving them a little push with your finger. They should feel soft but not squishy. Sometimes I cover the pan if I’ve made them too thick or it seems like they need a little push into being done. Be careful not to overcook though – just right is so much better.
- Eat!
These are almost like turkey meatloaf burgers, so feel free to forgo the bun. Unless that will make your children feel deprived, or if that’s the only part they will eat. 🙂
