Jo Pratt's Chicken, Broccolini and Rosemary Risotto
Ingredients
- 2 tbsp olive oil
- 1 onion finely chopped
- 2 cloves garlic crushed
- 2 large chicken breasts cut into bite-size pieces
- 12.35 oz risotto rice we used Riso Gallo
- a couple of stalks of rosemary
- 1 large glass dry white wine
- 37 fl oz hot vegetable or chicken stock
- 7 oz broccolini cut into 2-3 cm pieces
- 1.76 oz Parmesan cheese finely grated
