Jo Pratt’s Chicken, Broccolini and Rosemary Risotto

  • 2 tbsp olive oil
  • 1 onion (finely chopped)
  • 2 cloves garlic (crushed)
  • 2 large chicken breasts (cut into bite-size pieces)
  • 12.35 oz risotto rice (we used Riso Gallo)
  • a couple of stalks of rosemary
  • 1 large glass dry white wine
  • 37 fl oz hot vegetable or chicken stock
  • 7 oz broccolini (cut into 2-3 cm pieces)
  • 1.76 oz Parmesan cheese (finely grated)
