Jo Pratt’s Chicken, Broccolini and Rosemary Risotto
- 2 tbsp olive oil
- 1 onion (finely chopped)
- 2 cloves garlic (crushed)
- 2 large chicken breasts (cut into bite-size pieces)
- 12.35 oz risotto rice (we used Riso Gallo)
- a couple of stalks of rosemary
- 1 large glass dry white wine
- 37 fl oz hot vegetable or chicken stock
- 7 oz broccolini (cut into 2-3 cm pieces)
- 1.76 oz Parmesan cheese (finely grated)
