This savory dip is a great companion for pita chips! Beets, walnuts, and herbs blended together to create a delicious accompaniment for crudites, pita chips, and as a spread on sandwiches.

Beetroot, Walnut & Herb Dip with Pita Chips

For the Beetroot, Walnut & Herb Dip:

  • 1 cup cooked beets (chopped)
  • 1-2 garlic cloves (crushed)
  • 1 small bunch fresh cilantro
  • 1 small bunch fresh parsley
  • 1/2 cup shelled walnuts
  • 3 tsp olive oil (extra virgin)
  • 2 tsp red wine vinegar
  • salt
  • ground pepper

For the Pita Chips:

  • 1 pack white or brown pita bread
  • salt
  • ground pepper
  • olive oil (extra virgin)
