Beetroot, Walnut & Herb Dip with Pita Chips
For the Beetroot, Walnut & Herb Dip:
- 1 cup cooked beets (chopped)
- 1-2 garlic cloves (crushed)
- 1 small bunch fresh cilantro
- 1 small bunch fresh parsley
- 1/2 cup shelled walnuts
- 3 tsp olive oil (extra virgin)
- 2 tsp red wine vinegar
- salt
- ground pepper
For the Pita Chips:
