Cucumbers and summer: long lost friends that have waited all fall winter and spring to meet up again. Find cucumbers that are refreshing and crisp, combine with mint and cream, and you will have a salad both aromatic and decadent. Eat this creamy cucumber mint salad with abandon on a summer day with a glass of chilled white wine and in a hammock, if possible.
Creamy Cucumber Mint Salad
- 4 persian cucumbers
- 1/2 cup heavy cream
- 1/2 cup greek yogurt
- 1 handful mint leaves
- 1/2 tsp salt
- 1/2 lemon
- Slice cucumbers lengthwise and then into chunks.
- Pour the heavy cream into a jar, put on the lid and shake it up! Or task your kids with the job; The shake it up method is a great way to involve your kids in cooking, and then hopefully eating!
- Chop the mint leaves, taking time to inhale their refreshing scent!
- In a medium size (and pretty if possible) bowl, combine the cucumbers, cream, mint, salt, and squeeze of lemon.
This recipe calls for Persian cucumbers because in my opinion, they are the yummiest. When fresh (they do spoil quickly, so don’t delay!), Persian cukes are firm, dense, juicy and flavorful, perfect for a salad. If you can’t find them, don’t despair, regular cukes should do fine, just use less. Persian cucumbers are very small.
